Not all shrimp are created equal. A jumbo shrimp (like 16/20 per pound) will take a full 3 to 4 minutes per side. A tiny salad shrimp? More like 45 seconds total. Adjust your timing based on size, not just a generic recipe.
The easiest cheat? Buy shrimp that’s already peeled and deveined (save the shells for stock). Then just watch for the color and shape. It’s almost impossible to mess up if you trust your eyes.
