How Long Can I Store Sweet Potatoes
Did you find a sweet potato hiding behind the pasta box that’s been there since last spring? Don’t panic. A few tiny sprouts? That’s totally fine. Cut off the sprouts and any soft spots, and the rest is perfectly edible. It’s just a potato trying to be a plant.
However, if it’s sprouted a whole alien-like tendril that’s longer than your hand, it might be too tough and woody to enjoy. At that point, plant it in a pot and see if you can grow a vine. It’s a lot more fun than eating a sad, stringy potato.
