Baked Chicken Pieces in the Oven
Here’s my go-to. Preheat your oven to 425°F. Line a baking sheet with foil or parchment paper (easy cleanup, you’re welcome).
Place your chicken pieces skin-side up, giving them space—don’t crowd the pan. Crowding = steaming = sad, rubbery birds.
Roast for about 35-40 minutes for thighs and drumsticks, or 20-25 for boneless breasts. The game-changer is an instant-read thermometer: 165°F in the thickest part, and you’re golden (literally).
Side comment: If you don’t own a meat thermometer, you’re gambling with salmonella. Just buy one—it’s cheaper than a hospital visit.
The Crispy Skin Trick
Now, for that crackly, golden skin we all crave. After the chicken is cooked, switch your oven to broil for the last 2 to 3 minutes.
Watch it like a hawk because broilers are impatient bullies. One minute you have crisp perfection, the next you have carbon.
