Can You Eat Russet Potato Skins
First, scrub the heck out of them. Use a brush. Sing a song while you do it—it doesn’t matter.
No soap. Just water. No exceptions. Soapy potato skin is a crime against cooking.
Next, look for green spots or sprouts. If you see them, don’t eat the skin. Cut them off or toss the whole potato.
Remove any eyes (the little nubs). They’re not tasty, just weird.
The Texture Trick
Raw russet skin is like chewing on cardboard. Do not do that.
