Never, ever use extra virgin olive oil for deep frying. That’s like using a vintage Ferrari to haul plywood. It burns fast, tastes bitter, and will fill your kitchen with smoke that smells like regret. Also, avoid butter. I know, it’s delicious, but it burns at the temperature of a warm summer day. Butter is for dipping the final product in, not for cooking it.
And whatever you do, don't use sesame oil. That stuff is a flavor bomb meant for stir-fries, not for baptizing a chicken leg. You’ll end up with chicken that tastes like a Chinese food order mixed with a Southern picnic. It’s weird. Stick to the boring stuff for boring results, or the good stuff for glory.
