Substituting Sour Cream for Heavy Cream
Feeling brave? For most soups, sauces, and baked goods, you can use a straight 1:1 substitution. Start with the same amount of sour cream as you would heavy cream, and then taste. If it feels too tangy, add a little butter (say, a tablespoon per half cup) to mellow out the acidity and bump up the fat.
Another hack: mix sour cream with a splash of milk or even water to thin it out. This mimics heavy cream’s consistency better. You’re essentially creating a “fake out” cream that behaves similarly but has that secret tangy superpower.
And here’s a wild one: in some recipes, sour cream can improve the final product. Ever notice how cheesecake recipes call for sour cream? It’s because it prevents cracks and adds a complex, almost buttery depth. Heavy cream just doesn’t have that same grip.
