How to Substitute Tomato Paste for Sauce
Did you know tomato paste is basically a survival food? It’s the most shelf-stable tomato product. It will outlast a zombie apocalypse.
Ancient Romans? They reduced wine into a thick paste called defrutum. Same concept, different fruit. We are continuing a 2,000-year-old tradition of reducing liquids for flavor.
Also, one tablespoon of paste has more lycopene than a whole raw tomato. That’s the antioxidant that makes you glowy. You’re literally eating beauty paste.
When To NOT Substitute (A Cautionary Tale)
Don’t do a 1:1 swap. If a recipe calls for one cup of sauce, do not dump in one cup of paste. That would be a brick of tomato flavor. It would be inedible. You’d cry.
Also, avoid this trick for brothy soups or watery dishes. The paste needs to be dissolved and balanced. It’s not a magical water-soluble powder.
But for chili, spaghetti sauce, shakshuka, or pizza topping? This is your new superpower. Use it wisely.
