Fresh pasta hasn’t been dried out. It’s still full of moisture and softness right from the start. When you drop it into boiling salted water, it rehydrates almost instantly—there’s no hard, dry core to work through. Imagine a sponge that’s already wet; a dry sponge needs time to soak, but a wet one is ready in a flash. That’s your homemade pasta.
This also means you can’t just walk away. Set a timer, or better yet, watch for the moment the pasta floats to the surface. That’s the classic trick: once it bobs up and looks plump, give it another 30 seconds, and it’s game time.
