Temp for Salmon to Be Done
This is the sneaky part. Fish keeps cooking after you take it off the heat. So if you cook it to 145°F on the stove, by the time you plate it, it’s 150°F and drier than a stand-up comedian’s first joke.
Rest your salmon on a warm plate, not a cold one. Cover it loosely with foil. That little rest is where the texture goes from “good” to “damn, that’s nice.”
I once forgot to rest salmon. I served it immediately. The middle was perfect, but the edges were sad. Don’t be me. Be better.
What About Different Cooking Methods?
Grilling? Same temp, but watch for flare-ups. Oven? Same temp, but bake at 400°F for about 12-15 minutes for a 1-inch thick fillet. Pan-searing? Get that crust golden brown, then check the temp.
The method doesn’t change the target. 125-130°F for medium-rare. 145°F for well-done (if you must). No matter how you cook it, the temp is your north star.
