The Brine Factor
If you brine your chicken (even for just 30 minutes in salt water), it buys you more time. Brined meat can handle an extra minute or two in the fryer without drying out. It’s like sunglasses for your chicken — it protects against the harsh glare of hot oil.
Don’t brine for longer than 4 hours, though, or you’ll get pickle-chicken. That’s not a compliment.
