Is Chorizo a Sausage
So, why do some people say that chorizo is a sausage, while others disagree? It all comes down to the definition of a sausage, which can be pretty fluid (pun intended). If we're thinking of a sausage as a type of meat product that's encased in a skin, then maybe chorizo doesn't quite fit the bill.
After all, traditional chorizo is usually sold as a loose, cured meat that's been sliced or crumbled, rather than as a neat little sausage in a casing. But on the other hand, some types of chorizo are indeed stuffed into casings and served as a more traditional sausage - so what gives?

Maybe chorizo is similar, and exists in a category all its own.
