How Long Will Fondant Last
Commercially bought fondant (like the Wilton stuff) is surprisingly forgiving. If you store it properly, it can last anywhere from several months to over a year past its printed expiration date. Yes, you read that right—it’s practically the Twinkie of the cake world.
But here’s the catch: you have to treat it like a diva backstage at a concert. Air is its enemy, and humidity is its frenemy. Leave it out on the counter, and it will dry into a cracked, crusty mess faster than you can say "buttercream."
The "Sweater Weather" Rule
Think of fondant like a cozy wool sweater. It likes to be wrapped up tight. The best way to store it is to smother it in a thin layer of vegetable shortening (Crisco is perfect), then wrap it like a mummy in plastic wrap. No gaps! Then, pop it into an airtight zip-top bag.
Keep it in a cool, dark cabinet—not the fridge! Never put fondant in the refrigerator. The fridge will make it sweat and become sticky and gross, like a forgotten container of leftovers. Room temperature is its happy place.
